We’re not fulfilling FDA’s food pyramid, despite fresh lime juice affording some fruit properties. Margarita sorbet will, however, satisfy one of the major happiness groups on our pyramid of life. You know the section, just below spiritual enrichment, right above spa treatments, to the left of baby goat videos. That’swhere we’ll find the take-the-edge-off group (placement and prominence varies).

The effort to joy ratio works here, especially for entertaining. Hands-on time is manageable and of course this is a complete do-ahead preparation. What you’ll have is the most sublime concoction with the most perfect kick that you can’t believe you made yourself, fulfilling yet another section of our life pyramid – achievement.

Maybe quest for achievement is a touch American and that alone makes us need the other life pyramid groups, but the point is that on so many levels, this frozen treat will make you happy.

Equipment makes preparation faster, but it’s not essential. You’ll need one cup of lime juice, freshly squeezed kind is a must, yet if your grocer offers the real deal, probably okay. If you’re thinking something from that bottle or worse the plastic green lime shaped squeezer – this is me reaching through the screen and slapping you.

My sister gave me thiscitrus juicer which extracts every drop of juice making fresh margaritas just an outlet away. The black flecks in the sorbet is lava sea salt. I realize that most people are not obsessed with salt because they’re doing Mother Teresa levels of charity work orworking several jobs or working just one job of prominence like a human rights attorneyspecializing in international and criminal law while setting the fashion world on fire – thanks for not cookingAmal Clooney. We were served a margarita at Outside Lands dusted with black lava sea salt and so it’s been our thing for margs ever since. We bought this one in San Francisco, but since I can’t find an online US distributor, I would opt for these guys when our supply runs out.

An ice cream maker, although seeming extreme in the kitchen appliance category, turns this cocktail mixture into sorbet in fifteen minutes of hands-free churning. You can use the blender methodif you don’t have an ice cream maker.Remember if you are using an ice cream maker, freeze the canister overnight before starting the recipe.

Margarita sorbet is refreshingly delicious and ready in your freezer for an afterwork reward, a pleasant dessert, or as a palate/life cleanser to kick-off that dinner party. Remember to freeze responsibly. We don’t want the kids scooping out a bowl of alcohol laced sorbet. Or do we? Kid-control, another section in the life pyramid toward happiness. Chill.

Ingredients are important when cocktail-sorbeting. We squeeze fresh lime juice and use decent tequila. After making the simple syrup with cane sugar, which took on a brown cast, we opted for white sugar, enabling the light green hues from the lime juice to come through. I added the slightest drop of green coloring for brightness.

preptime: 10 min servings 6-8

chill/freezing time: allow 2-3 hours (not hands on)

  • 1 cup of lime juice (5-6 large limes)
  • 1/2 cup tequila
  • 1/2 cup Grand Marnier (or Triple Sec)
  • 2 cups water
  • 1 cup sugar (white will help color)
  • flaky salt or black lava salt (optional)
  1. Heat water and sugar until sugar is dissolved. Remove from heat. Let it cool down.
  2. Add lime juice, tequila and Grand Marnier.
  3. Put it in the refrigerator to chill.
  4. Process in an ice cream maker according to manufacturer’s directions.
  5. Scoop into chilled glasses.
  6. Sprinkle with a few granuels of salt.
